Country Pancakes

Country Pancakes

2        eggs

2        T. butter, melted

2        C. milk

2        C. flour

3        t. baking powder

4        T. sugar

½        t. salt

Beat eggs, melted butter and milk.  Add sugar and stir.  Add flour, salt and baking powder.  Mix well, breaking up large lumps.  It may be a creamy batter with some lumps.  Pour out on griddle using medium low to medium heat.  Flip when bottoms are golden.  Cook until done. These pancakes turn out fluffy and are much better than Aunt Jemima or Bisquick!

Yields 18 four-inch pancakes.
