Restaurant Beef and Vegetables

1         lb. Chuck Steak or Flap Steak

1         Onion

2         cloves Garlic

1+       lb. Your favorite Vegetables (broccoli, bok choy, pea sprouts, spinach, bell peppers, etc.)

1         T. Baking Soda

2         T. Cooking Oil

salt, pepper, soy sauce, hoisin sauce, ketchup, Water, 

Cut beef across grain into 2-3” long thin strips.  Slice onions, chop chosen vegetable into 2-3” strips. Soak beef in solution of water and dissolved baking soda for 5 min.

Drain beef, removing as much water as possible by wringing with hands.  Mix in soy sauce to cover, hoisin sauce, generous squeeze of ketchup, salt, pepper, and set aside.  Grill onions.  Pan-fry vegetables until ¾ done and set aside.   Pour 2 tbsp cooking oil in pan, heat well, and pour in marinated beef.  Turn over often with spatula.  When ¾ cooked, pour in veggies and mix well.
