Malibu Chicken

6        chicken breast halves

½        C. fine saltine cracker crumbs

½        C. flour

oil to brown in

6        pieces of ham

6        slices of Swiss cheese

Sauce:

1         C. mayonnaise

¼        C. prepared mustard

Stir together sauce ingredients; let refrigerate and let flavors blend.  Debone chicken breasts.  Mix flour and cracker crumbs together and place in shallow dish.  Dip each piece of chicken in water and coat with the flour-cracker crumb mixture.  In skillet, brown for 5 minutes or until golden brown on each side.  Place on ungreased baking sheet and bake at 275˚ oven for about 1 hour or until cooked but still moist and tender.  Place on plate, top each chicken breast with a piece of ham and slice of cheese.  Melt cheese on top and serve with or without sauce.  Makes 6 servings.
