500 g. (17.5 oz) marscapone cheese (found in Italian delis)
5 eggs separated
6 T. sugar
2 boxes of ladyfingers (24 in each box)
3 C. water
4 T. Nescafe instant
4 t. liqueur (St. James’ Dark Rum from Trader Joe’s)
unsweetened cocoa powder
Beat/mix marscapone, egg yolks, and sugar. Whip egg whites until stiff. Fold the whites gently into the cheese.
Make coffee syrup with the water, Nescafe and liqueur. Dip ladyfingers into coffee mixture and line in a 9x13 pan. Spread cheese mixture on top, and sprinkle with cocoa.
Line a 2nd layer of dipped ladyfingers, cheese mixture and only sprinkle cocoa when you’re ready to serve.
Refrigerate until ready to serve. May also be frozen.
