3 8 oz cream cheese, softened
2/3 C. sugar
1 t. vanilla
3 eggs
30 vanilla wafers
1 can cherry pie filling
Mix first four ingredients together. Place paper cupcake liners in muffin/cupcake pan. Put a vanilla wafer on bottom. Fill with mixture until 2/3 full. Bake for 15 to 18 minutes at 350˚.
After baking, place on a wire rack. After cooling, spoon 2 to 3 cherries (cherry pie filling) on top. If you don’t eat right away, store in refrigerator. Makes 30.
