Goo Goo's Spanish Rice

Goo Goo’s Spanish Rice

2        C. uncooked rice

¼        cube margarine or 2 T. oil

pinch of oregano, cumin

2        cloves of garlic, crushed

½        C. diced tomatoes

3        C. chicken broth

Brown rice in frying pan with melted margarine or oil.  Add pinch of oregano, cumin and crushed garlic.  Add ½  C. diced tomatoes and blend well.  Add 3 C. chicken broth and bring to boil.  When liquid is low, turn heat to low until done.
